I have three main hobbies/interests: sports, music, and food. So being able to be part of Table for Two is quite a thrill for me! One of my guilty pleasures is cookbooks. I have more cookbooks than I need. What can I say, I love them. I enjoy reading new recipes and concocting a meal that I can share with Ashley and/or family & friends; the more ingredients, the better. I have no official training and I’m far from being the world’s best chef, but it’s a passion that I love.
The Christmas season is one of my favorite times of year. It brings back good memories of Christmas morning and family feasts. Food is an essential component of the overall Christmas celebration and there are certain recipes that stand out to me every December. One them is the Yule Log. It’s a dessert that I usually make it if we’re having people over or if we’ve been invited to dinner at a friend’s house.
This is a simple, tasty dessert. If you’ve never made your own whipped cream it’s super easy and takes it up an extra notch. The chocolate wafers soften within the whipped cream cocoon making wintery magic. Enjoy!
Yule Log
Ingredients:
1 9 oz. box of Nabisco Famous Chocolate Wafers
1 Pint heavy whipping cream
2 tablespoons sugar
2 teaspoons vanilla
Directions:
Beat sugar and whipping cream on high until stiff peaks form. Add vanilla and beat on medium 30 seconds.
Spread 2 teaspoons of whipped cream to a single wafer. Repeat with all the wafers, stacking them in short stacks.
Once all the wafers have been stacked, lay them in a row (wafers standing vertically) and connect each stack by applying 2 teaspoons of whipped cream between wafers. This should form a long, log-like structure.
Apply remaining whipped cream to the log, covering completely. Refrigerate for at least 4 hours.
Just before serving, top with crushed candy canes (2 or 3 candy canes) or chocolate shavings.
Slice diagonally and serve.
Makes approximately 8 slices.
